Bravo™ apple Rolled Pork, Miso, Ginger, Soy & Spring Onion
Apple and Pork have long been a winning combination. This Bravo™ apple Rolled Pork recipe demonstrates a non-traditional take on the pairing to present a modern and elevated flavour. It really highlights the Bravo™ apple’s juiciness and crunchiness with tasty raw matchstick slices. The delicious savoury spicy flavours of the miso, ginger and soy combine in a dish that is quick and easy to prepare, tastes wonderful and presents beautifully.
Ingredients
Serves 4
800g pork loin or pork fillet
2 tbsp white miso paste
2 tbsp fresh ginger, finely grated
2 Bravo™ apples, grated skin on
salt flakes & black pepper
4 – 8 wooden skewers
50g unsalted butter
3 spring onions, finely sliced
1 Bravo™ apple, cut into matchsticks
1 tbsp Tamari or plain soy
Method
- Slice the pork loin or fillet into ½ cm thick slices. Using a meat mallet or a rolling pin, flatten each piece of pork until half the thickness, covering each piece with plastic wrap as you flatten it out.
- Mix the miso paste and ginger together before evenly spreading on each piece of flattened pork. Evenly divide and top with the grated apple before tightly rolling. Secure the end of each piece by threading through a wooden skewer.
- Preheat oven to 180˚C. Heat the butter in a large oven-proof frying pan. When frothy and just starting brown, place the pork rolls in the pan. On a gentle heat, turn to evenly brown on all sides. Cover with a lid or aluminum foil and bake in the oven for 10 minutes.
- Drizzle the soy over the pork rolls and serve garnished with the Bravo™ apple matchsticks, spring onions and pan juices.
